Ingredients

  • 3 c. flour
  • 1 tsp. salt
  • 1/2 c. sugar
  • 2/3 c. shortening
  • 1/4 c. boiling water
  • 1 tsp. soda
  • 1/2 tsp. ginger
  • 1/2 tsp. cinnamon
  • 1/2 c. molasses
  • 1/2 c. coconut

Instructions

  1. Sift together flour, soda, salt, ginger, and cinnamon.
  2. Cream together sugar and shortening.
  3. Stir in molasses, boiling water, and coconut.
  4. Blend in the dry ingredients gradually.
  5. Chill dough for at least 2 hours.
  6. Roll out 1/3 of the dough at a time on a floured surface to 1/8-inch thickness.
  7. Place on ungreased cookie sheets.
  8. Bake at 375° for 7 to 10 minutes.
