Glazed Apple Loaf

Instructions
- Preheat oven to 350°.
- Grease and flour loaf pans (one 9 x 5-inches, two 8 x 4-inches or six 5 x 3-inches).
- Sift flour, salt and soda; set aside.
- In a large mixing bowl beat oil, sugar, eggs, vanilla, cinnamon and nutmeg until well blended.
- Add dry ingredients and mix until smooth.
- Fold in apples and pecans. Divide batter evenly among desired pans.
- Bake in the center of 350° oven for one hour or until tested done.
- Decorate with glaze.
