Ingredients

  • 4 lb. brisket
  • salt and pepper
  • 1 onion, diced
  • 2 c. water
  • 4 slices canned pineapple
  • 6 Tbsp. honey
  • 1/2 c. pineapple juice
  • 4 Tbsp. sugar

Instructions

  1. Place the brisket in a Dutch oven and season with salt and pepper. Add diced onion and water.
  2. Cook until the brisket is tender, about 2 1/2 hours.
  3. Remove the brisket from the Dutch oven and place it in a roasting pan.
  4. Secure pineapple slices to the top of the meat with toothpicks.
  5. In a saucepan, boil honey, pineapple juice, sugar, and water to make the glaze.
  6. Pour the glaze over the meat in the roasting pan.
  7. Roast in an oven preheated to 425°F for 35 minutes, basting every 10 minutes.
  8. Add more water to the pan if it gets dry during roasting.
