Glazed Pineapples

Ingredients

  • 1/3 cup brown sugar
  • 1 lemon, juice of
  • 2 cups fresh pineapple chunks (3 - 1/2 inch rings pineapple, halved)
  • 1/8 teaspoon grated gingerroot
  • 1/8 teaspoon grated jalapeno
  • 2 tablespoons Kahlua
  • 1/4 cup raisins (optional)

Instructions

  1. Melt sugar and lemon juice add pineapple top with ginger, jalapeno and optional raisins simmer till tender flipping half way through. About 5-7 minutes.
  2. Serve hot or chilled.
