Ingredients

  • 4 large carrots
  • 1/2 c. apricot preserves
  • 1/2 (8 oz.) can tomato sauce
  • 1/4 c. packed brown sugar
  • 1/4 c. dry red wine
  • 2 Tbsp. lemon juice
  • 2 Tbsp. cooking oil
  • 1 tsp. onion juice
  • 1 1/2 lb. lean boneless pork
  • fresh pineapple chunks

Instructions

  1. Cut carrots into 1-inch pieces.
  2. In a small saucepan, cook, covered, in a small amount of boiling salted water, for 15 to 20 minutes; drain.
