Ingredients

  • 1 lb. sweet potatoes
  • vegetable cooking spray
  • 1 Tbsp. cornstarch
  • 1 Tbsp. brown sugar
  • 3/4 c. unsweetened orange juice
  • 2 Tbsp. lemon juice

Instructions

  1. Place potatoes in a 1-quart casserole, coated with cooking spray.
  2. Combine cornstarch and brown sugar in a small bowl.
  3. Add orange juice and lemon juice, stirring well.
  4. Pour over potatoes. Cover and bake at 425° for 40 minutes or just until potatoes are tender and glaze is thickened.
