Glazed Turkey Kabobs

Ingredients

  • 16 cubes (1 in. each) cooked turkey (1 lb.) [can also use boneless chicken breasts cooked and cubed]
  • 1 can pineapple chunks drained (reserve juice)
  • 1/2 c. packed brown sugar
  • 2 Tbsp. soy sauce
  • 16 slices bacon, cut in half
  • 2 lg. green/red bell pepper cut into 24 (1 1/2 in.) triangles
  • 3 lg. green bell peppers, cut into 32 (1 1/2 in.) triangles

Instructions

  1. Preheat broiler.
  2. Add water to pineapple juice to make one cup.
  3. Combine juice, brown sugar and soy sauce in small saucepan. Boil over high heat.
  4. Reduce heat to low.
  5. Simmer 2-3 minutes. Set glaze aside.
