Glazed Turkey Kabobs
Ingredients
- 16 cubes (1 in. each) cooked turkey (1 lb.) [can also use boneless chicken breasts cooked and cubed]
- 1 can pineapple chunks drained (reserve juice) ⓘ
- 1/2 c. packed brown sugar ⓘ
- 2 Tbsp. soy sauce ⓘ
- 16 slices bacon, cut in half
- 2 lg. green/red bell pepper cut into 24 (1 1/2 in.) triangles ⓘ
- 3 lg. green bell peppers, cut into 32 (1 1/2 in.) triangles ⓘ
Instructions
- Preheat broiler.
- Add water to pineapple juice to make one cup.
- Combine juice, brown sugar and soy sauce in small saucepan. Boil over high heat.
- Reduce heat to low.
- Simmer 2-3 minutes. Set glaze aside.
