Goose Barbecue

Ingredients

  • goose, diced
  • 3 onions, diced
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. brown sugar
  • 1/2 c. catsup
  • salt and pepper to taste
  • 2 Tbsp. onion flakes
  • 3 stalks celery, diced
  • 1 Tbsp. parsley flakes
  • 1/2 c. barbecue sauce
  • 2 Tbsp. celery seed

Instructions

  1. Soak goose overnight in salt water (optional).
  2. Place goose in pot of water (1/4 full); add dry onion flakes and celery seed. Bring to a boil, then simmer until goose is done, approximately 1 to 3 hours.
  3. When tender, remove goose; let cool.
  4. Take meat off bones and cut into bite-size pieces.
  5. Cook until soft, onions and celery.
  6. Add rest of ingredients, stir and let simmer 30 to 45 minutes.
