Graham popovers are light, crispy, and mildly sweet baked treats with a hearty whole wheat flavor, perfect for breakfast or snack with butter or jam.

Ingredients

  • 2/3 cup fine whole wheat flour
  • 1/3 cup unbleached white flour
  • 1/4 teaspoon salt
  • 7/8 cup milk
  • 2 eggs
  • 2 tablespoons butter or oil

Instructions

  1. Mix the fine whole wheat flour, unbleached white flour, and salt in a bowl.
  2. Beat the eggs lightly until well combined.
  3. Slowly add the milk and butter to the eggs, stirring continuously.
  4. Add the flour mixture to the wet ingredients and mix well.
  5. Beat the batter for 1 minute with an electric beater until smooth and like heavy cream.
  6. Pour the batter into buttered muffin tins, filling each about 1/3 full.
  7. Bake in a preheated oven at 450°F for 20 minutes.
  8. Reduce the oven temperature to 350°F and bake for an additional 15 minutes.
  9. Remove the popovers from the tins and serve warm.
