Ingredients

  • 1/2 to 2/3 cup cracklins
  • 1/2 teaspoon salt
  • 3 heaping tablespoons plain corn meal
  • 2 water

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Soak cracklins in about 1/2 cup of water for about 10 minutes.
  3. Add the corn meal, salt, and enough water to make a very thin batter.
  4. Pour the batter into a greased 8-inch or 9-inch cake pan.
  5. Bake for about 5 minutes, then turn the oven down to 400°F (204°C).
  6. Bake for an additional 15 to 20 minutes until the hoecake is golden brown and crunchy.
