Ingredients

  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 cups scalded milk
  • 3 egg yolks
  • 1 cup shredded coconut
  • 1/2 teaspoon vanilla

Instructions

  1. Combine cornstarch, sugar, and salt in a double boiler or heavy saucepan.
  2. Gradually add scalded milk and cook over hot water until it starts to thicken.
  3. Add a small amount of hot mixture to the beaten egg yolks, then return the mixture to the saucepan.
  4. Cook for 2 more minutes.
  5. Add vanilla and shredded coconut to the filling.
  6. Pour the filling into a prepared pie shell.
  7. Top with meringue and bake at 375°F for 20 to 25 minutes.
