Ingredients

  • 1/2 lb. salt pork or ham hock
  • 1 or 2 bunches collards
  • salt and pepper to taste
  • hot pepper sauce

Instructions

  1. Wash the salt pork and place it in a large pot with about 6 to 8 cups of water.
  2. Bring to a gentle boil, cover, and cook for about 30 minutes.
  3. Prepare the collards by discarding tough outer leaves and stems, then tear the leaves into manageable pieces.
  4. Add the prepared collards to the pot with the pork and cook for about 1 1/2 hours or until the greens are tender. Add salt and pepper near the end of cooking.
  5. Drain the greens and chop them coarsely before serving.
  6. Arrange the chunks of pork on a platter or with the greens on the serving dish.
  7. Serve with hot pepper sauce and cornbread.
