Ingredients

  • 14 eggs
  • 1 green pepper, diced
  • 1 large onion, sliced
  • seasoning (Tabasco, garlic, oregano)
  • 8 slices white bread
  • cooked bacon, ham or sausage
  • 1 can sliced water chestnuts, drained
  • 2 cans mushrooms, drained
  • 4 tomatoes, diced
  • sharp Cheddar cheese slices

Instructions

  1. Beat the eggs and season to taste with Tabasco, garlic, and oregano.
  2. Simmer diced green pepper and sliced onion until tender-crisp.
  3. Line a well-oiled 9 x 12-inch pan with slices of white bread.
  4. Cover the bread with cooked bacon, ham, or sausage.
  5. Layer the cooked vegetables (pepper and onion) over the meat.
  6. Add diced tomatoes on top of the vegetable layer.
  7. Pour the beaten eggs over all the layered ingredients.
  8. Press down gently to compact the layers.
  9. Let stand overnight before baking or serving.
