Ingredients

  • 8 oz. chopped dates
  • 1 tsp. baking soda
  • 2 c. hot water
  • 1/4 c. shortening
  • 1 c. granulated sugar
  • 2 beaten eggs
  • 3 1/2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt

Instructions

  1. Lightly grease and flour 2 loaf pans.
  2. Preheat oven to 350°F (175°C).
  3. Dissolve baking soda in hot water.
  4. Add chopped dates to the water and let cool.
  5. Cream shortening and sugar until fluffy.
  6. Add beaten eggs to the creamed mixture.
  7. Gradually mix in flour, baking powder, and salt.
  8. Stir in the cooled date mixture.
  9. Pour batter evenly into the prepared loaf pans.
  10. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
