Ingredients

  • 1 medium frying chicken, cut to pieces
  • 2 Tbsp. oil
  • salt and pepper
  • 3/4 pt. tomato sauce
  • 2 oz. black olives, sliced
  • 2 tsp. cinnamon

Instructions

  1. Wash and dry the chicken pieces.
  2. Brown the chicken well in oil in a heavy pan, seasoning with salt and pepper to taste.
  3. Mix tomato sauce, sliced black olives, and cinnamon in a bowl.
  4. Combine the browned chicken and the sauce mixture in a covered oven dish.
  5. Bake at 325°F (gas 3) for 1 1/2 to 2 hours, turning occasionally, until the chicken meat falls away from the bone.
