Ingredients

  • 1 medium onion
  • 2 cups rice
  • 4 cans chicken broth
  • 1 medium carrot
  • 1 medium zucchini
  • 1 bay leaf
  • 1 teaspoon dried basil leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the chopped onion and 2 tablespoons of chicken broth until onions are tender.
  2. Shred the carrot and zucchini.
  3. Add rice, the remaining chicken broth, shredded vegetables, bay leaf, basil, thyme, salt, and pepper to the pot.
  4. Bring the mixture to a rapid boil, stirring occasionally.
  5. Cover the pot, reduce heat to low, and cook for 20 minutes or until the moisture is absorbed and rice is tender.
