Ingredients

  • 8 quail
  • 1/3 cup butter
  • 1 onion, sliced
  • 1 leek, sliced
  • 2 sweet peppers, sliced
  • 6 strips bacon, diced
  • chicken stock
  • 1 1/3 cups rice
  • salt
  • pepper
  • 3 tomatoes, chopped

Instructions

  1. Saute the onion in butter; add leek, sweet peppers, and diced bacon. Cook until tender.
  2. Stuff each quail with the vegetable and bacon mixture.
  3. Place the stuffed quail in a heavy, tightly covered pot and cook until tender.
  4. Add rice, chopped tomatoes, salt, and pepper to the pot; stir well.
  5. Pour in chicken stock to make approximately 2 2/3 cups liquid and cook until rice is tender and liquid is absorbed.
