Greek Cheese Triangles

Golden-brown Greek cheese triangles with flaky phyllo and creamy feta filling, perfect as appetizers or party snacks for cheese lovers and entertaining occasions.

Ingredients

  • 1 lb. domestic Feta cheese
  • 1 can small curd cottage cheese (16 oz.)
  • 6 eggs
  • 3 sticks melted butter
  • 1 package Phyllo pastry
  • dash of salt

Instructions

  1. Mix crumbled Feta cheese and cottage cheese thoroughly.
  2. Add eggs (3 whole eggs and 3 egg whites) and mix well.
  3. Cut the phyllo pastry into strips about 2 inches wide and 10 inches long.
  4. Line the strips on a board and brush lightly with melted butter.
  5. Place 1 1/2 teaspoons of filling on one end of a pastry strip and fold the corner over to make a triangle.
  6. Continue folding from side to side in a triangle shape until the desired size is reached, using all the phyllo and filling.
  7. Place the triangles in a buttered baking pan side by side and brush the tops generously with melted butter.
  8. Bake in a moderate oven at 350°F (175°C) until golden brown, about 25 minutes.
