Ingredients

  • 2 lb. potatoes, cut in cubes
  • 1 envelope dry Lipton onion soup mix
  • 1/2 cup olive oil
  • salt and pepper
  • parsley flakes

Instructions

  1. Place all ingredients in a plastic Ziploc bag and shake to coat evenly.
  2. Transfer the coated potatoes to a shallow baking dish.
  3. Bake at 350°F (175°C) for 1 1/2 hours, stirring several times during baking.
  4. If the potatoes brown too fast, cover the dish with foil.
