Greek Red Snapper

Ingredients

  • 2 1/2 - 3 lbs red snapper
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 2 -3 garlic cloves
  • 16 ounces whole tomatoes, sliced up
  • 1/2 cup white wine
  • 2 tablespoons parsley, chopped
  • 1/4 tablespoon basil, chopped
  • 10 -12 Greek olives, pitted

Instructions

  1. Saute onion, pepper, and garlic in hot oil. Add tomatoes; simmer 15 minutes.
  2. Brush a shallow baking dish with olive oil and place fish in dish. Pour wine over top.
  3. Pour hot tomato mixture over fish.
  4. Dot with a little butter.
  5. Bake at 350F for 45 minutes to 1 hour.
  6. Combine parsley, basil and olives and sprinkle over fish.
