Ingredients

  • 5 sweet green peppers
  • 5 sweet red peppers
  • 5 medium onions
  • 1 Tbsp salt
  • 1 c heaped sugar
  • 1 c vinegar

Instructions

  1. Grind the green peppers, red peppers, and onions into small pieces using a food grinder.
  2. Add the salt and let the mixture stand overnight.
  3. In the morning, drain the mixture well.
  4. Add the sugar and vinegar to the drained vegetables.
  5. Cook the mixture for 20 minutes or longer until the vegetables are soft and tender.
  6. Spoon the hot relish into sterilized 1/2 pint jars.
  7. Cover with lids and process in a hot water bath for 5 minutes.
  8. Remove from the water and let cool for 24 hours before storing.
