Ingredients

  • 24 green tomatoes
  • 6 large onions, sliced
  • 4 c. vinegar
  • 3/4 lb. sugar
  • 1 Tbsp. salt
  • 1/2 Tbsp. black pepper, ground allspice and ground cloves
  • 1 Tbsp. ground mustard

Instructions

  1. Slice the green tomatoes but leave the skins on.
  2. In a large pot, combine sliced tomatoes, sliced onions, vinegar, sugar, salt, black pepper, ground allspice, ground cloves, and ground mustard.
  3. Cook slowly over low heat, stirring frequently to prevent scorching, until the vegetables are tender and the mixture has thickened, about 1½ hours.
  4. Pour the hot mixture into clean, sterilized jars and seal immediately while hot.
