- Slice the green tomatoes but leave the skins on.
- In a large pot, combine sliced tomatoes, sliced onions, vinegar, sugar, salt, black pepper, ground allspice, ground cloves, and ground mustard.
- Cook slowly over low heat, stirring frequently to prevent scorching, until the vegetables are tender and the mixture has thickened, about 1½ hours.
- Pour the hot mixture into clean, sterilized jars and seal immediately while hot.
