Grilled Bread Panzanella

Ingredients

  • 1 lb tomatoes, diced
  • 1/2 cup sliced red onion
  • 1/2 cup Italian dressing, like Kraft Tuscan
  • 1 None orange, zested and juiced
  • 12 (1/4 inch thick slices) French bread
  • 2 tbsp garlic olive oil
  • 8 oz marinated mozzarella balls (bocconcini), halved
  • 1/2 cup chopped fresh basil leaves

Instructions

  1. In a large bowl, combine tomatoes, onion, dressing, 1 tsp orange zest and 1/4 cup orange juice. Season.
  2. Preheat grill. Brush both sides of bread with oil. Grill for 2 mins, turning once, or until golden brown.
  3. Toss mozzarella and basil with tomato mixture. Arrange over grilled bread.
