Ingredients

  • 1 tsp. lemon-pepper seasoning
  • 1 tsp. white pepper
  • 1 tsp. Creole seasoning
  • 1 tsp. blackened fish seasoning
  • 2 Tbsp. lemon juice
  • 4 catfish fillets (1 1/3 lb.)
  • vegetable cooking spray
  • lemon wedges

Instructions

  1. Combine lemon-pepper seasoning, white pepper, Creole seasoning, and blackened fish seasoning in a small bowl.
  2. Sprinkle lemon juice and the seasoning mixture on both sides of the catfish fillets.
  3. Spray a fish basket with vegetable cooking spray.
  4. Place the seasoned fish in the basket.
  5. Grill the fish, covered, over medium coals (400°F) for 7 to 10 minutes on each side or until the fish flakes easily with a fork.
  6. Remove the fish from the basket and place on a serving platter.
  7. Garnish with lemon wedges and celery tops if desired.
