Gringo Cabbage

Ingredients

  • 1 medium head cabbage
  • 1 c. buttered bread crumbs
  • 1 c. grated American cheese
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/2 c. butter
  • 3 Tbsp. flour
  • 1 1/2 c. milk
  • 1 can Durkee onion rings (optional)

Instructions

  1. Chop cabbage coarsely into large pan; add 1/2 teaspoon salt. Cover with boiling water; boil for 7 minutes and drain.
  2. Place half of cabbage in shallow baking dish.
  3. Make white sauce with butter, flour, salt, pepper and milk.
  4. Pour half of sauce over cabbage.
  5. Sprinkle with half the cheese and half the bread crumbs. Layer with the remaining cabbage, cheese and crumbs.
  6. Pour remaining white sauce over top.
  7. I sprinkle can of Durkee onions over the top of casserole.
  8. Bake at 350° for 30 minutes.
