Ingredients

  • 4 cups boiling water
  • 2/3 teaspoon salt
  • 1 cup quick grits
  • 1/4 pound oleo
  • 3/4 pound grated cheese
  • 2 tablespoons chopped green chilies
  • 2 tablespoons pimiento
  • 2 beaten eggs

Instructions

  1. Cook the quick grits in boiling salted water until done.
  2. Add oleo, grated cheese, chopped green chilies, pimiento, and beaten eggs to the cooked grits.
  3. Mix well and pour into a baking dish.
  4. Bake for 1 hour at 300°F (150°C).
