Instructions

  1. Chop the onion, green pepper, and zucchini into bite-sized pieces.
  2. Place the chopped vegetables in a large, heavy pan sprayed with cooking spray and sauté for about 5 minutes.
  3. Add the red wine and bring to a boil.
  4. Reduce heat and add the tomato sauce, garlic, thyme, marjoram, oregano, basil, bay leaf, salt, and pepper.
  5. Let the sauce simmer until flavors meld, approximately 20 minutes.
  6. Taste and add a pinch or two of sugar if the sauce is too acidic.
  7. Serve over rotini or bow tie pasta.
  8. Sprinkle lightly with Parmesan cheese before serving.
