Ingredients

  • 2 (3 oz. each) pkg. or 1 (6 oz.) pkg. Jell-O lemon flavor gelatin
  • 1/2 tsp. salt
  • 2 c. boiling water
  • 1 1/2 c. cold water
  • 1 Tbsp. vinegar
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1/4 c. diced pimiento

Instructions

  1. Dissolve gelatin and salt in boiling water.
  2. Add cold water and vinegar.
  3. Chill until thickened.
  4. Fold in vegetables and pour into 4-cup mold.
  5. Chill until firm, about 3 hours.
  6. Unmold. Garnish with salad greens.
  7. Yields 8 servings.
