Hazelnut Roll

- Separate the eggs into whites and yolks.
- Beat the egg whites until stiff peaks form, then gradually add sugar.
- Add egg yolks, rum extract, almond extract, and ground hazelnuts with baking powder to the egg whites and sugar mixture.
- Mix on low speed until well combined.
- Grease a baking pan and line it with wax paper, then grease the paper.
- Pour the batter into the prepared pan and bake at 325°F (160°C) for 20 minutes.
- Remove the cake from the oven and turn it out onto a towel sprinkled with powdered sugar.
- Carefully peel off the wax paper and roll the cake in the towel until it has cooled.
- Unroll the cake and spread with sweetened whipped cream or Cool Whip.
- Re-roll the cake lengthwise twice and refrigerate before serving.
