Ingredients

  • 6 eggs
  • dash of salt
  • 1 3/4 cups ground hazelnuts with 1 teaspoon baking powder
  • 3/4 cup sugar
  • 1/4 teaspoon rum extract
  • 1/4 teaspoon almond extract

Instructions

  1. Separate the eggs into whites and yolks.
  2. Beat the egg whites until stiff peaks form, then gradually add sugar.
  3. Add egg yolks, rum extract, almond extract, and ground hazelnuts with baking powder to the egg whites and sugar mixture.
  4. Mix on low speed until well combined.
  5. Grease a baking pan and line it with wax paper, then grease the paper.
  6. Pour the batter into the prepared pan and bake at 325°F (160°C) for 20 minutes.
  7. Remove the cake from the oven and turn it out onto a towel sprinkled with powdered sugar.
  8. Carefully peel off the wax paper and roll the cake in the towel until it has cooled.
  9. Unroll the cake and spread with sweetened whipped cream or Cool Whip.
  10. Re-roll the cake lengthwise twice and refrigerate before serving.
  11. This hazelnut roll freezes well for future enjoyment.
