Ingredients

  • 2 eggs
  • 1/4 c. oil
  • 1 c. milk
  • 1 c. whole cornmeal
  • 1/2 c. white flour
  • 1/2 c. whole wheat flour
  • 1 Tbsp. baking powder
  • 1/4 c. sugar
  • 1/2 tsp. salt

Instructions

  1. Mix wet ingredients together in a large bowl.
  2. Add dry ingredients and mix thoroughly.
  3. Spoon into 12 greased muffin tins and bake for 12 to 15 minutes at 400°.
  4. Or bake in a 9 x 9-inch greased pan for 20 to 25 minutes at 400°.
