Instructions
- Preheat oven to 425°F.
- Wash chicken and pat dry.
- Cream together 3 tablespoons butter, garlic, Parmesan cheese, sage, thyme, and basil.
- Turn chicken breast side up and loosen the skin to create a pocket.
- Spread herb mixture underneath the skin.
- Smear softened butter on the outside of the skin.
- Place chicken breast side up in a roasting pan and put in the oven.
- Melt the remaining butter.
- Cook chicken for 15 minutes, basting once.
- Reduce oven temperature to 350°F.
- Roast for 20 minutes per pound, basting with melted butter every 10 minutes.
- Serve hot.
