Herb roasted chicken features a crispy skin and flavorful herb butter under the skin, making it perfect for family dinners or special occasions with rich, aromatic flavors.

Ingredients

  • 1 large roasting chicken (about 6 lb.)
  • 3 Tbsp. butter, softened
  • 1 clove garlic, minced
  • 3 Tbsp. grated Parmesan cheese
  • 1/2 tsp. sage leaves
  • 3/4 tsp. thyme leaves
  • 3/4 tsp. basil leaves
  • 6 Tbsp. butter, softened

Instructions

  1. Preheat oven to 425°F.
  2. Wash chicken and pat dry.
  3. Cream together 3 tablespoons butter, garlic, Parmesan cheese, sage, thyme, and basil.
  4. Turn chicken breast side up and loosen the skin to create a pocket.
  5. Spread herb mixture underneath the skin.
  6. Smear softened butter on the outside of the skin.
  7. Place chicken breast side up in a roasting pan and put in the oven.
  8. Melt the remaining butter.
  9. Cook chicken for 15 minutes, basting once.
  10. Reduce oven temperature to 350°F.
  11. Roast for 20 minutes per pound, basting with melted butter every 10 minutes.
  12. Serve hot.
