Ingredients

  • 1 lb. chicken breast or thick pork chops
  • 1 (20 oz.) can sliced pineapple
  • 1/2 cup Dijon mustard
  • 1/2 cup honey

Instructions

  1. Season chicken or pork with salt and pepper.
  2. Sauté until golden brown.
  3. Drain pineapple and reserve the juice.
  4. Blend the pineapple juice, Dijon mustard, and honey until smooth.
  5. Pour the blended sauce over the meat.
  6. Allow to simmer for 30 minutes.
  7. Top with pineapple slices.
  8. Simmer for an additional 5 minutes.
  9. Thicken the sauce with cornstarch, if desired.
