Herbed Baked Halibut

Ingredients

  • 4 (5 oz.) fresh halibut or scrod fillets
  • juice of 1/2 lemon or lime
  • 1 tsp. crushed Italian herb seasoning
  • freshly ground pepper
  • 1 (8 oz.) can salt-free tomato sauce
  • 1 small onion, chopped
  • 1/2 c. chopped celery
  • 1 green pepper, chopped
  • 2 ripe plum tomatoes, chopped
  • 6 fresh mushrooms, sliced

Instructions

  1. Sprinkle fillets with lemon juice, herb seasoning and pepper. Marinate 10 to 20 minutes.
  2. Pour a bit of tomato sauce in the bottom of a small, shallow baking dish.
  3. Lay fish on top of sauce and bake in upper third of a preheated 375° oven for 10 minutes. Layer top of fish with onion, celery, green pepper, tomatoes and mushrooms.
  4. Pour remaining tomato sauce over vegetables and bake at 375° for 20 to 25 minutes or until fish flakes.
  5. If you like, the fish may be prepared and served directly in individual baking dishes.
