Herbed Potato Skins

Crispy herbed potato skins offer a flavorful snack or appetizer with fresh herbs, served with tangy malt vinegar or lemon wedges, perfect for sharing or casual gatherings.

Ingredients

  • 6 large baking potatoes
  • 1/2 cup finely minced herbs such as chives, rosemary, oregano or savory
  • ground sea salt
  • freshly ground pepper
  • malt vinegar
  • lemon wedges

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Remove the skins from the potatoes in large strips with a sharp knife or vegetable peeler, including some potato with each sliced skin.
  3. Soak the skins in ice water for 15 minutes.
  4. Remove the skins and pat very dry.
  5. Spread the pieces of skins out on a large baking sheet.
  6. Spray them with a fine mist of olive oil; toss and spray again.
  7. Bake the skins for 10 minutes; lightly spray both sides again.
  8. Bake for another 5 minutes, then sprinkle with the herbs.
  9. Return the skins to the oven; bake 5 minutes longer until lightly browned and crisp.
  10. Sprinkle with salt and pepper; serve immediately with malt vinegar or lemon wedges on the side.
