Ingredients

  • 4 medium baking potatoes, sliced into 1/4-inch slices
  • 2 medium white onions, sliced into 1/4-inch slices
  • 5 plum tomatoes, sliced
  • 1/2 tsp. salt
  • 1 tsp. dry thyme
  • 3/4 tsp. crushed rosemary
  • 1 Tbsp. olive oil
  • 2 Tbsp. parsley

Instructions

  1. Preheat the oven to 425°F and coat a large baking dish with cooking spray.
  2. Layer half of the sliced potatoes, onions, and tomatoes in the dish.
  3. Sprinkle with half of the salt, thyme, and crushed rosemary.
  4. Repeat the layers with the remaining potatoes, onions, and tomatoes.
  5. Drizzle the olive oil over the layered vegetables.
  6. Cover the dish and bake for 35 to 40 minutes or until tender.
  7. Remove from oven and sprinkle with chopped parsley before serving.
