Ingredients

  • 6 cloves garlic
  • 1 cup olive oil
  • 1 carrot, chopped
  • 1 onion, chopped
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • ground pepper
  • 6 drops Tabasco sauce
  • 1 teaspoon salt
  • 3/4 cup red wine vinegar
  • 1/2 cup water
  • 2 tablespoons chopped parsley
  • juice and grated rind from 1 orange

Instructions

  1. In a heavy cast-iron or enameled pot, cook the garlic in olive oil until hot.
  2. Add chopped carrot, chopped onion, bay leaf, dried thyme, ground pepper, Tabasco sauce, and salt.
  3. Cook and stir with a wooden spoon for 5 minutes.
  4. Add the red wine vinegar and water; simmer for an additional 10 minutes.
  5. Add chopped parsley and remove the pot from heat.
  6. Stir in the juice and grated rind of the orange.
