Ingredients

  • 1 boneless rib roast
  • 2-3 garlic cloves, thinly sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley flakes
  • 1/2 tsp dried marjoram

Instructions

  1. Cut 15 slits in the roast; insert garlic slices into the slits.
  2. Combine salt, pepper, basil, parsley flakes, and marjoram; rub the mixture over the roast.
  3. Place the roast fat side up on a rack in a roasting pan.
  4. Bake uncovered at 325°F for 2 to 2 1/2 hours or until the meat reaches the desired doneness.
