Ingredients

  • 4 lb. beef tenderloin roast
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. Italian seasoning
  • 1/2 tsp. cracked black pepper

Instructions

  1. Heat oven to 425°F.
  2. Combine Parmesan cheese, Italian seasoning, and black pepper; press evenly into the beef tenderloin roast.
  3. Place the roast on a rack in a shallow pan.
  4. Roast approximately 45 to 50 minutes for medium rare to medium doneness, or until meat thermometer registers 140°F for medium-rare or 155°F for medium.
  5. Sprinkle with Parmesan cheese.
  6. Let stand for 15 minutes.
  7. Slice and season with salt before serving.
