Ingredients

  • 1 pkg. active dry yeast
  • 4 c. warm water (105 to 110 degrees F)
  • 2 Tbsp. sugar
  • 4 c. all-purpose flour
  • 1 medium potato, peeled and quartered

Instructions

  1. Dissolve yeast in warm water in a large bowl.
  2. Add sugar and flour; mix well.
  3. Add potato.
  4. Cover bowl with cheesecloth.
  5. Let stand at room temperature 5 to 10 days until mixture has a fermented aroma, stirring 2 or 3 times a day.
  6. To store, transfer starter to a jar and cover with cheesecloth.
  7. Refrigerate to use.
  8. Bring desired amount to room temperature.
  9. Replenish starter after each use by stirring in 1/4 cup flour, 3/4 cup water, and 1 teaspoon sugar.
  10. Cover and let stand at room temperature for at least 1 day, then refrigerate.
  11. If starter isn't used within 10 days, stir in 1 teaspoon sugar or honey.
  12. Repeat every 10 days unless replenished.
