Ingredients

  • 2 2/3 cups red candied cherries
  • 2 1/4 cups candied pineapple
  • 1 1/2 cups quartered dates
  • 3 cups pecan halves
  • 1/2 cup all-purpose flour
  • 1 package white cake mix
  • 1 3/4 teaspoons salt
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 2 eggs

Instructions

  1. Dredge the cut-up fruit with 1/2 cup of all-purpose flour to coat.
  2. Mix the white cake mix according to the package instructions; add vanilla extract and salt.
  3. Beat the mixture with a beater on medium speed for 2 minutes.
  4. Add one egg at a time, beating for 2 minutes after each addition.
  5. Stir in the chopped pecans and the floured fruit.
  6. Spread the batter evenly into two wax paper-lined and oiled bread pans or into an oiled and wax paper-lined angel food pan.
  7. Bake at 275°F (135°C) for 3 to 3 1/2 hours with a shallow pan of water placed below the cake for moisture.
  8. Allow the cake to cool completely after baking.
  9. Glaze the cooled cake with hot white corn syrup.
  10. Decorate with candied cherries or pineapple if desired.
