Ingredients

  • 2 to 3 lb. cubed venison
  • 1 large onion
  • 2 cans sliced mushrooms, drained
  • 1 (12 oz.) can beer
  • 2 cans tomato paste
  • 2 cans Italian tomatoes, cut up
  • 1 bottle barbecue sauce
  • bite-size potatoes
  • carrots
  • celery
  • salt
  • pepper

Instructions

  1. In a 14-inch Dutch oven, brown cubed venison, sliced onion, and drained mushrooms.
  2. Add beer and simmer until the meat is tender, adding liquid as needed (beer or water).
  3. Add tomato paste, Italian tomatoes, barbecue sauce, bite-sized potatoes, carrots, and celery.
  4. Simmer until vegetables are done.
  5. Season to taste with salt, pepper, etc.
  6. Make a thickening mixture using cornstarch and water.
  7. Add the thickening to the stew slowly until the desired consistency is obtained.
  8. Remove the Dutch oven from heat.
  9. Open biscuits and place on top of the stew.
  10. Oil the underside of the lid and place it on the Dutch oven.
  11. Add sufficient hot coals to the top of the lid and check often until biscuits are golden brown, about 20 minutes.
  12. Enjoy!
