Ingredients

  • 2 c. white cornmeal
  • 1 c. boiling water
  • 1/2 tsp. salt
  • 1 Tbsp. bacon drippings

Instructions

  1. Combine the cornmeal and salt in a small mixing bowl.
  2. Stir in boiling water and set the mixture aside to cool.
  3. Divide the mixture into 8 portions and shape each into a cake.
  4. Heat the bacon drippings in a heavy skillet until hot, but not smoking.
  5. Add the cakes to the skillet and fry over medium heat about 15 minutes, turning to brown both sides.
