  • 1/4 tsp. thyme
  • 2 lb. smoked sausage

Instructions

  1. Soak the black-eyed peas overnight in water.
  2. Add salt pork to the peas, cover with water, and cook over low heat for 45 minutes.
  3. Add chopped onions, green onions, parsley, garlic, salt, red pepper, hot sauce, Worcestershire sauce, tomato sauce, oregano, and thyme to the peas and salt pork.
  4. Cover and cook over low heat for 45 minutes.
  5. Add the smoked sausage cut into 1-inch pieces.
  6. Continue cooking over low heat for another 45 minutes.
  7. Serve the smoked sausage and black-eyed peas over rice. Great with French bread and salad.
