Ingredients

  • potato
  • black pepper
  • stalks celery
  • onion
  • parsley
  • fresh loose sausage
  • salt

Instructions

  1. Mix potatoes, sausage, onion, and seasonings (celery, if used) together.
  2. Take one end of pig's belly and sew it shut.
  3. Stuff the pig's belly with the mixture of potatoes, sausage, onion, and seasonings.
  4. Close the end by sewing or using baking nails.
  5. Cook the stuffed pig's belly in a pot of salted water for about 45 minutes.
  6. Remove from water and place in a roasting pan.
  7. Bake in a 375°F oven with the lid on the roaster until golden brown, about 45 minutes.
