Ingredients

  • 1 large head cauliflower
  • 1 (2 oz.) can sliced mushrooms
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/2 cup shredded Swiss cheese
  • 1 Tbsp. chopped pimento

Instructions

  1. Bread cauliflower into medium-sized flowerets and cook in boiling water until tender, about 10 minutes.
  2. Drain well and set aside.
  3. In a saucepan, sauté sliced mushrooms in butter.
  4. Gradually blend in flour, then stir in milk.
  5. Cook, stirring constantly, over medium heat until thickened.
  6. Stir in salt, shredded Swiss cheese, and chopped pimento.
  7. Place half of the cauliflower in a buttered 2-quart casserole.
  8. Cover with half of the sauce.
  9. Add remaining cauliflower and top with remaining sauce.
  10. Bake at 325°F (160°C) for 15 minutes.
