- Wash the navy beans and cover with water. Soak overnight.
- The next morning, cook the beans slowly until their skins burst or until just tender. Drain, reserving the cooking liquid.
- Place half of the cooked beans in a bean pot or casserole dish.
- Bury part of the salt pork in the beans and add half of the remaining ingredients: salt, dry mustard, molasses, and onion.
- Add the remaining beans and seasonings on top.
- Place the remaining salt pork over the top of the beans.
- Pour the reserved bean liquid over everything and bake in a 250° to 300°F oven for 6 to 8 hours.
