Ingredients

  • 2 cups dry navy beans
  • 1/4 pound sliced fat salt pork
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dry mustard
  • 2 tablespoons molasses
  • 1 small onion

Instructions

  1. Wash the navy beans and cover with water. Soak overnight.
  2. The next morning, cook the beans slowly until their skins burst or until just tender. Drain, reserving the cooking liquid.
  3. Place half of the cooked beans in a bean pot or casserole dish.
  4. Bury part of the salt pork in the beans and add half of the remaining ingredients: salt, dry mustard, molasses, and onion.
  5. Add the remaining beans and seasonings on top.
  6. Place the remaining salt pork over the top of the beans.
  7. Pour the reserved bean liquid over everything and bake in a 250° to 300°F oven for 6 to 8 hours.
