Ingredients

  • 1 gallon peeled zucchini, drained
  • 1 1/2 cups lemon juice
  • 2 cups sugar
  • 3/4 teaspoon salt
  • 1 (46 oz.) can pineapple juice
  • 1 teaspoon pineapple extract

Instructions

  1. Combine all ingredients in a pot and simmer for 20 minutes.
  2. Pour into jars and process in a hot water bath for 20 minutes or freeze.
