Ingredients

  • 2 lb. pork roast
  • 1 lb. beef roast
  • garlic salt
  • cumin

Instructions

  1. Season the pork and beef roasts with garlic salt, cumin, and chili powder to taste.
  2. Cook the meats until tender, then shred into small pieces.
  3. Prepare the masa harina dough according to your preferred recipe, adding seasonings if desired.
  4. Spread a thin layer of masa dough onto soaked corn husks or tamale wrappers.
  5. Place a portion of shredded meat on the center of the masa-covered husk.
  6. Fold the husk to enclose the filling, then tie or fold the open end to secure.
  7. Steam the assembled tamales for approximately 1 to 2 hours, or until the masa is firm and cooked through.
  8. Serve hot, with salsa or your preferred toppings.
