Hominy Scramble

Instructions
- Fry bacon partially done (not crispy).
- Remove from pan and cut in bite-size pieces.
- Add green pepper to drippings.
- When cooked, add hominy and heat through.
- Add bacon.
- Add hot sauce to eggs and beat slightly.
- Add salt to taste.
- Pour eggs in hominy mixture and continue to cook while stirring until eggs are set. Serves 4.
