Hot Breakfast Casserole

Ingredients

  • 2 (4 oz.) cans diced chiles
  • 2 c. tomatoes, drained and chopped
  • 2 c. Cheddar cheese, grated
  • 1 c. Bisquick
  • 1 c. milk
  • 3 eggs
  • 1 c. onion, chopped
  • 1 lb. sausage (regular or hot)

Instructions

  1. Mix Bisquick, milk and eggs.
  2. Brown the sausage and onion, then drain.
  3. Line a 3-quart buttered casserole with the chiles and tomatoes.
  4. Pour Bisquick mix over top; add meat mixture and top with the cheese.
  5. Bake at 350° for 30 to 35 minutes.
